We had this with Filet Mignon Roast for Father’s Day dinner.
Rub the clean ears of corn with olive oil and sprinkle with salt and pepper.
Cover broiler pan with foil. Broil 12-14 minutes turning once about 4 inches from the heat.
Watch it closely.
Don’t do what I do and wander off or get distracted.
I roasted the potatoes and peppers together, tossed with olive oil, salt and pepper.
I let everything cool a bit and then tossed everything together with fresh basil, minced garlic, red wine vinegar (about 3 Tablespoons) and a bit more olive oil.
