Cafe au Lait Pudding

Yeah, I know.

This is so good and so easy. It is easily the creamiest pudding I have ever eaten.

The main thing to pay close attention to: don’t heat the pudding up too quickly. The cornstarch will clump on the bottom and then you end up with lumpy pudding, which is just too gross.

Because I can never ever just make a recipe as written, I used 1/4 cup of sugar, 2 tsp. of Double Dutch Dark Cocoa, 2 tsp. of espresso powder, 2 % milk, 1 tsp. of vanilla extract in the pudding.

The cocoa kind of got lost behind the espresso powder flavor.

I also added about 1/4 teaspoon of cinnamon to the whipped cream.

I loved it.

Mr. Smith felt it was not chilled enough. Also coffee flavored items are not really his thing.

Despite Mr. Smith’s thumbs down review, I will be making this one again!
